potato inspiration urgently needed

Has anyone got a recipe for a potato side dish as dh and ds is fed up with mash, roast and boiled. i need to use up mushrooms, onions, peas and carrots as they are on the turn. thanks

Souffle potatoes - typed this up last night but you can adapt. Bake and scoop out inside, keeping outsides intact.Put insides in bowl along with maybe spring onions or peppers and some cheese (adaptable - depending on supply and taste)? Mash it all up, add salt and pepper (and spices if you like). Separately whisk up an egg white until light a fluffy. Fold into potato mixture. Scoop misture back into each potato skin. Put cheese on top and bake for about ten pr fiften minutes - when cheese brown and bubbly. I have made these and i can honestly say they are gorgeeous! My friend has went on about them ever since. SMoked bacon is nice in too.

jacket, wedges, sauted, gratin, curried, cakes, 'crash hot potatoes' (par boiled, squashed with a hard object like a rolling pin, drizzle with oil and salt and baked on high), salad with vinegrette or mayo, rosti/ hash brown/ latkes...People seem not to see that their opinion of the world is also a confession of character.

bombay potatoes
chop potatoes into bite size pieces and par boil
fry sliced onion in pan
add drained potatoes
add tin of tomatoes
add 150gms of any curry sauce - i use tikka masal
100mls water and simmer for 20mins
very very yummy
can add any other veg too - cauliflower makes it aloo gobi and spinach sagg aloo but hey you could make own combo!!0 -
A simple but very tasty change is:
slice potatoes
slice tomotoes (bit thicker than pot)
slice onions
Layer in a oven dish.
Season and top with butter. Bake in oven until pots are done.0 -
Chop onions carrots and mushrooms, add peas and sautee until cooked.
Grate potatoes, squeeze excess water out, mix with sauteed veg, add an egg and a couple of tbsp flour, form into patties and shallow-fry.Finally I'm an OAP and can travel free (in London at least!).0 -
Par boil potatoes, then slice them and fry in butter with onion and peas. Add some cooked chopped bacon and a shake of black pepper...lovely!0

why not try "stovies" using tatties as a main dish really easy, cheap and goes far.
tatties
onions
corned beef
roast gravy and dripping from butchers or couple of oxo cubes
brown onion in small amount of dripping or oil
peel tatties, cut into small chunks and add to the onions. add gravy or crumbled oxo and put enough water in until it is just peeping through the tatties boil gently until really soft and falling apart stir in couple of slices of corned beef and serve with oatcakes or bannocks if your north of the border and a big dollop of brown sauce mmmmmmmmmmm!0
