can i freeze raita?

Just a quick question.
Last night I had friends over for a curry (homemade MSE style of course). I made a raita out of yoghurt, cucumber, mint and other dried herbs. I have loads of it left.... can it be frozen in small amounts?

Just a quick answer - NO!!

oh, ok thanks. I did think it might. ANy other tips for how it can be used up in the next few days then?

You could take some in a pot for a quick dip with carrot or celery sticks
or if you are making say a lamb /chicken curry dish, add it to that.
or mix with cooked chicken chunks, with some salad/veg in pitta
or have it as a accompanient (sp.?) to you other dishes, say lamb, as it helps with digestion
if you keep it at the back of the fridge, bottom shelf or coldest part, it should keep for a few days, though may separate but stir well.

You can freeze yoghurt, but put it into ice lolly moulds first, and eat it frozen!I Believe in saving money!!!:T
