Sounds like a duff recipe to me, it shouldn't get to the toffee stage without showing some signs of producing a set even if its a soft set.
The one time I overdid my marmalade I needed 1 jar less. Either I screwed up with the amount of water or the fruit didn't produce enough juice (probably the latter as they were very hard and didn't ream so well
)
Have you looked at it since you potted it? Did it set harder or stay fairly liquid? I am intrigued as to why it didn't work

I posted the above after they'd gone cold and I'd poked some of it with a spoon... it was a lot runnier when I first put it in the jars warm.
First time round I had 4 jars (different sizes) so obviously after yesterday's faffing around waiting for it to show signs of setting I must have boiled off more of the vinegar... I think the jar I didn't use was 225g, plus the smallest jar wasn't full this time. I probably ended up boiling it for 30 mins waiting for it to set... hence the darker colour and concentrated sugar!
I did wonder if I'd over-processed the veg... but then the instruction was to chop it in the blender, which I did
My TV is broken!
Edit: refunded £515 for TV 1.5 years out of warranty - thank you Sale of Goods Act! :j0
