Help cooking lamb or we'll eat the lot!

I got some whoopsied lamb last week, cubes and mince but (foolishly) froze it in large (4+) portions when I just cook for just two most of the time. When I looked in my recipe book lots of them say can't be frozen. Usually I'd make a big pot of something and OH and I would eat it all :o but I'm trying hard to be both thrifty and thinner!!

Please share your favourite lamb recipes that I can portion up and freeze. It's in a good cause!

    You could make the base for shepherds pie then freeze it in portions.

    The cubes could be made into curry and frozen.

    In my Slow cooker last night was.....Curry! Some cubes of lamb, red lentils, finely sliced onion, tinned tomatoes, spices (I use a little dried chilli, cumin, coriander seed, green peppercorns, mace and cloves) some quartered mushrooms, green peppers cut into chunks, water, and a block of coconut cream. Makes a delicious curry, and the lentils help to stretch the meat content too. I stir some coriander leaf into mine as well once it's cooked. Absolutely delish if I do (vainly!) say so myself!

    Other ideas with lamb - savoury mince mixture can be used for Shepherds Pie, savoury pancake fillings, if kept a little drier it makes a good mixture for filling HM pasties too. How about bolognese sauce with lamb instead of beef for a change?

    When I have lamb mince I always make lamb burgers the first day and make up a sheppards pie which we re-heat the next.

    How about a moussaka or make into kofta kebabs for the mince the cubes could make a nice stew or curry

    Thanks all. I think I'll try to find some simple lamb burger recipes for the mince. Can anyone suggest one? Is it OK to freeze moussaka? And, other than curry, does anyone have a good casserole recipe for the cubed lamb?
