cooking ham ending up dry

The last couple of pieces of smoked ham that I've taken out of the freezer have ended up dry.
I thaw in water as the joints are smoked. They are just too strong left unsoaked. I then boil in fresh cold water for approx 20 mins 500g.
I have done this with fresh pieces and they are lovely, but the frozen come out dry. Any advice?

Do you roast them or boil them when you cook them ?Blessed are the cracked for they are the ones that let in the light
