    philly is great but tbh own brand 'soft cheese' does the job just as well - just make sure you use full fat not 'light'

    Try using belgian chocolate paste. You can make it with any colour chocolate (although you need to use tempered chocolate if you're making it yourself). There's some info on it here http://www.traceyscakes.co.uk/pagesnew/usefulinformation/shop_classes.htm#paste and

    I'm sure you can find more if you google it. Decorate with real or sugar flowers, or with ribbons etc. If you want a feather effect, use rice paper, NOT feathers!

    You can stack sponge/carrot cakes etc, but you will need to use dowels and boards/drums to get the stacked effect. It's not difficult:

    Get a drum (thick cake board) slightly larger than the biggest cake, and put the cake on it. You then need to cut three dowels to the same depth as the cake, and make three holes in the cake to put them through. place a cake board the same size as the base of the next cake on top, and then place the cake on it. Repeat for as many tiers as you want! You can buy all this stuff at sugarcraft shops or online.

    Or... make and ice a fake cake, and have the real things cut up already!
  • Why don't you try ganache, it's sort of a fudgy chocolate that looks like icing, Simply melt your chocolate white or dark,choc in a double boiler, add a tbsp butter and i container of double cream mix and chill in the fridge for around 3 hours,

    You can add flavourings to your ganache such as lemon for the carrot cake or ginger, raspberry or orange for the chocolate and vanilla,or any for the victoria,

    The flavourings will not dye the ganche if you use Lorann ones , (try ebay) and you only need a couple of drops for an amazing flavour,

    I normally buy
    2 large white cooking chocolate packets, (or any flavour chocolate)
    1 tbsp non salted butter
    1 of those cartons of double cream you get in the frige of the supermarket,

    Melt chocolate
    add butter and double cream
    melt and mix together
    pop bowl in fridge for 2-3 hours until set.


    It will last for a around a week and you can flavour each batch seperately saving a heck load of time,. x
