My cakes will be plain victoria sponge, carrot cake and chocolate cake. They will all come without icing and what I want to do is have them end up looking like a 3 tier wedding cake but have the icing in flavours to suit the cakes.
I thought a plain frosting on the victoria sponge maybe with a touch of vanilla flavour, either the same on the carrot cake or maybe with a touch of orange or lemon to add a different flavour. The tricky one is the chocolate cake,I want this iced in white frosing too so I thought perhaps a white chocolate flavour icing as I really don't think anything else would go well.Has anyone had or made white chocolate icing before?
Tips and ideas for all these please.I can bake at all, always mess it up,but I am sure I can manage some icing:o

hi
if you post over on the old style boards you'll get loads of good advice. theres some very knowledgable people over there when it comes to baking
hope that helps and good luckWhat matters most is how well you walk through the fire0 -
ive been making cakes for a few years now, what i would do is fill each cake with what flavored butter cream you want (chocolate, vanilla, lemon) and then cover all the layers in Swiss meringue Butter cream frosting (the recipe I use is from the Martha Stewart website) it whips up nice and white. Remember to use dowels and boards in your cakes for the support system. Good Luck0

The only thing with not going with royal icing is that you'll probably have to do the icing on the day or the day before. Nigella's books seem to have lots of icing and frosting recipes in them.Got married 23rd May 2009, many thanks to all on the Weddings and Anniversaries board for their help and support!

Wow. This is *exactly* what I want to do for my wedding! And the same flavour cakes. Its the only thing my hubby-to-be has chosen so I'm really trying to get it together for him.
Have you just ordered the cakes from a bakery? Or a special cake maker?
Can you please post a photo of when its done. I know its not until Nov but I'd really appreciate info on how it came together.

M&S food ordering service do the large undecorated carrot cake and plain sponge cakes but I will have to look for a chocolate cake roughly the same size or hope M&S start doing one of those too before my wedding.
I do have the number of a baker very close to the venue so if she can do all 3 affordably I will go with her.
I will let you know what I end up doing."Reaching out to touch the stars dont forget the flowers at your feet".0
