3kg Pork - what to do with the rest of it

Hi all,

We managed to get a 3kg pork joint which we then covered in brown sugar and roasted - it was lovely with sage,onion&apple stuffing. This is the second time in 3 weeks we've got this joint because it was on offer at sainsburies. Now I'm a bit stuck with what to do with the rest of it - ideas please? There are only 2 of us, so this will take all week to eat!

I'm limited because OH can't eat curry, dishes with much dairy in them (butter = fine, cheese = ok in small amounts, milk-based sauce= bad), or red wine.

Last time we did stir-fry, risotto & sandwiches. I've gone through the pork threads on the mega-index, and will be trying it in toad-in-the-hole & the suggestion for layered with sliced potatos.
Still wish I could buy a TARDIS instead of a house!

    What about in a sweet and sour sauce. We also have a recipe where you pour soy sauce, bit of black pepper and garlic granules over pork (normally chops or steaks) and grill them. Gives a really nice savoury taste to them. We have it with stir fry or rice.

    In the winter, i always use the left over meat from a sunday roast in my slow cooker and make a stew, normally enough for 2 meals, and i freeze one, eat the other!!!

    I've been giving real thought to a slow cooker since I started reading this board in Sept. We've just completed on a new house & will be moving in 3 weeks so I have to wait to see how everything fits into the new kitchen first. (Plus get used to a gas cooker again - it's been about 11 years)

    If I was doing the grocery challenge this joint would be making a real improvement as our shopping has dropped by £50 at least.
    Still wish I could buy a TARDIS instead of a house!

    Before i had my slow cooker, used to make my stews on the hob, but the SC is def better!!!! Would def be a good investment, and there are loads of recipe threads for the SC here!!!!
  • Cut it into thick slices, dip in beaten egg and then cover in breadcrumbs and shallow fry in oil. This was my Mum's way of stretching the end of joint round 4 of us as it seems more. Plus it's very popular with kids - and men - looks a lot like junk food!

  • with pasta, onions, peppers, mushrooms , tomatoes, mixed dried herbs?

    Stir fry with egg noodles, spring onions, carrots, mushroom,peppers, soy,ginger,garlic, chilli?

    Pitta breads stuffed with thin slices and salad?

    Slice thinly and use in sandwiches/rolls, pork casserole, rissoto. Pork and brocolli - cook brocolli in boiling water for 3 mins, drain and refresh under cold water. In a hot wok/large frying pan: splash of oil, 1 inch grated ginger, 2 crushed cloves of garlic, let flavour infuse into oil for 1 min. Add thickly sliced onion and diced pork. Cook for 2 mins, add brocolli, 1/2 cup boiling water, tbsp dark soy sauce and tbsp rice wine/dry sherry. Thicken with cornstarch solution. Serve over boiled rice.
