Vegetarian Marshmallows - recipe needed

Hi, does anyone have a recipe for vegetarian marshmallows - ie made without gelatin. I've done a google search but not come up with anything of any use. The male members of the household want me to try and do a chocolate fondue with mallows to dip but being veggy, myself and dd don't eat them. Any help would be appreciated...

  • Can't you just buy vegetarian gelatine? It's normally stocked near the jellies in the baking section in the supermarket.

    You need to substitute agar for the gelatin in the recipe. You can get the agar (or agar-agar) in most health food shops.

    Hi, yes you can get it and I have got some in my cupboard. But, I've found that just substituting the same amount of the veggy stuff does not produce the same results as real gelatine as it doesn't set as firmly. I was hoping someone had a tried and tested recipe to save me having to experiment with different quantities of the veggy gelatine.

    I might try the agar that Squeaky suggested - thanks.
