I've never been the baking sort - I was completely put off at school. My eldest two nearly died from shock when I made a Christmas cake this year - but I followed the recipe to the letter and surprised myself to be honest!
I have 2.5yr old daughter and she loves cooking! So far I've completely cheated and bought packet mixes, but I'd like to some "proper" cooking with her.
Can you please recommend me your easy cake (fairy cakes, muffins maybe?) recipes?? I have a nice quiet weekend and would be ideal to do with her.

Easiest of all, especially with kiddies, are cornflake/crispie cakes. Melt some chocolate (in a bowl over a pan of hot water), stir in some cornflakes (or some rice crispies) and then put spoonfuls into small paper cases. Allow to set and enjoy! :drool:

Fairy cakes:
4oz self raising flour
4oz caster sugar
4oz butter or stork
I usually use 2 eggs but you can get away with one.
Cream the sugar and butter/stork really well
add the egg/s and beat in also add vannilla extract if using
gradually add flour and beat til mixture is combined
plonk in cases and in a medium oven, check after 10 mins.
Sorry am not sure on oven temps as I do it by memory now, lol! if you want to add sultanas or choc chips, bung them in at the end before putting in the cases xx0 -
we love making Delia's all in one cake, its so easy, just put everything in a bowl and mix!
