Insurance as part of mortgage offer...

Obviously when you take out a mortgage on the new property, you have to have B&C insurance in place - but what start date to have it from? Obviously we haven't moved yet, and have no date for moving, it could be anything from 3 weeks to 2 (or more if unlucky!) months...the mortgage provider will be calling back next week to check we have something in place (mortgage offer should be finalised Tuesday next week he said).
So what start date? Today (and pay for two properties for a while), in a week, a month?
Suggestions please!:o
