Eek! What can I cook??

DH has just text to say that he forgot to tell me that his daughter will be coming round tomorrow and that she'll be eating with us. I've been running down the contents of the freezer so I don't have alot in and I'm stuck for ideas on what to feed us all....

Just had a quick rummage in the freezer and I have:

Random bits of diced belly pork
Small amount of pork mince
Slice of haggis
Conger eel steak
Portion of bolognaise sauce
Portion of lasagne
Portion of cheese sauce
Prawns
1/2 14" chilli pizza
Portion of stewed beef
Stewed apples
Pastry (I think it's rough puff - lost its label :o )
Peas
Ice Cream
Tomatoes
Pasties
Few chicken wings

Dry stuff - I have lots of herbs and spices, rice, pasta, lentils, potatoes, tinned toms, baked beans, kidney beans, butter beans, tuna, sweetcorn, plain and SR flour, rice flour, gram flour, glutinous rice flour, buckwheat flour (flour fetish!!), eggs, cheese, mushrooms, tomatoes, onions, carrots, swede, butter, cream cheese, garlic,

I'm not feeling very inspired at the mo, what on earth can I make? :confused:

    Just reread my post and should point out that she's a very fussy eater so that rules out tuna, fish, prawns, mushrooms, tomatoes, carrots and any beans. Also, the belly pork (doesn't do visible fat on plate) and chicken (doesn't do bones on plate) :confused:

    Would she eat a tortilla? Parboil a few potatoes, then soften a chopped onion in your largest frying pan in quite a lot of butter, add sliced potatoes and cook over a low heat with a lid on until the potatoes are really soft; meanwhile, beat six eggs (for 3 of you) with some pepper and salt; tip the eggs onto the potato and onion mix; cook until set (finish the top off under the grill if it's a bit runny). Cut into wedges. Surprisingly filling and my VERY fussy daughter (age 10) likes this.

    Failing this - you have the ingredients for a quiche of some description...

    Or baked potatoes with a variety of toppings...

    Is there enough cheese sauce to do a macaroni (or other-shaped pasta) cheese?

    How fussy is she??!!

    Extremely!! She eats alot of takeaway food and "junky food" at mum's so it's difficult when she's with us.

    The tortilla sounds like a good option; my biggest frying pan is about 5 inch diameter though lol. Should I serve it with something else? :confused:

    Quiche would have to cheese and onion but again, I'd probably need something to accompany it. Cheese sauce is only really enough for two at a stretch but I could make a drop more if need be. Thanks!

    You could make individual tortillas (2 eggs each and divide the filling up). Comes to the same. The Spanish have it in sandwiches, but crusty Spanish bread is one thing and Best of Both is another, isn't it?!

    Could you do a home-made pizza, if she's into junky food? (Or does she hate tomato sauce and not just tomatoes)? You can make a scone base if you've no yeast, then heat a tin of tomatoes, chopped onion, any herbs you've got knocking round the place, spoonful of sugar and a glug of oil; bring to boil, simmer until thick; liquidise to get any naughty obviously tomato bits out; spread over pizza base; chuck cheese on top; bung in oven. Any good?

  • That is a really hard task!! As the mother of the worlds fussiest 15 year old I sympathise with you. Could you make spaghetti carbonara but without the bacon? My daughter will eat this, although its not her favourite!! How old is she? Would she eat omlette, chips and peas? or pastie and chips, or home made savoury rice? I just fry onion in a little butter and add rice and boil in chicken stock and then add peas and sweetcorn when it is nearly cooked - you could do that with omlette? I don't envy you!!!

    ChocClare - Home made pizza is a no no - have tried making a plain cheese and tomato pizza before (yes, blitzed down the naughty "real" tomato bits) but wasn't eaten. It's frustrating!

    Thanks Smiley Mum - beans of any sort are off the menu :wall: but I might try one of those recipes later in the week for me and DH.

    Recovering Spendaholic - can I send her to yours for tea? :p She's 14 BTW. I think she'd eat a cheese omelette but chips will be hit or miss depending on how thick or thin they are in relation to how crispy they are (don't ask!!) and peas are a definite no no. If we go down the rice route; it would be savoury rice without the savoury :rotfl: No peas or sweetcorn and no green obvious herby bits from the stock.

    I think I might tell my DH that he's going to be cooking! Toast and jam all round then!!

    What a job you've got, like someone has already mentioned I don't envy your task. I'm so glad that my kids are good eaters, it must be soooo frustrating for you. Here's what I'd offer...

    Similar problem with DD2 here ... but I'm on a programme of retraining her now she's 18 and will have to fend for herself when she goes to Uni. The thought of potential starvation is helping the change.

    I suggest doing the omlette (cheese?) and making her a plate of potato wedges to go with it (chop potatoes, drop in a plastic bag, add a few drops of olive oil and shake up. Onto a baking tray and into a 190c oven for 45 mins and turn part way through. I weaned DD onto these as plain ones, but also made herby / paprika ones for the rest of the family. I serve the wedges in a separate dish and I found that she started to try the other varieties when she saw other people weren't dying all around her and were clearing their plates;)

    I make little dishes of dip to go with them - basically a philly cheese and yogurt mix with extras added e.g.

    pesto
    mustard
    mustard and honey
    a little bit of mint sauce

    Not all together of course.

    Another recent discovery is Couscous. Basically a bowl of couscous mixed with some dried corriander soaked for five minutes in 3/4pint of vegatable stock (knorr cube). She will eat it hot and cold and I leave some in the fridge for when she is a raiding mood.
