Leftovers from fridge..

Hi everyone

We've all been ill this week so have a few things left in the fridge that are past their best but I don't want to waste (shoppings being delivered tonight so am cleaning the fridge and want to get them used up)

My minds blank as to what to do possibly a soup, would it all go together? could I just put it in the slow cooker and leave it? I have

Half a bag of carrots past their best!
A big Parsnip, past its best!
Half a bag of Apples
Half a bag of onions
A bulb of garlic minus one clove (possibly been in there a while but looks ok!)

2 bananas very ripe!

Can't throw it away my nan always taught me not to waste food!!!

    Chop the onions, bag in portions and freeze. Then when it comes to cooking, cook from frozen ;)

    Garlics and onions should last months - chop and freeze if you think they are nearing their end [I am still using garlic that I harvested lat August...it doesn't need to be in the fridge anyway].

    Parsnip - peel and chop and freeze - can go straight into the roast pan for roast.

    Carrots, can be peeled and chopped and parboiled and frozen.

    And banana and apple can be for pudding tonight - either muffins or oven cook and have with custard.

    Parsnips will be fine if cooked with other root veg for mash - eg pots, sweet pots, jerusalem artichokes). And the carrots as well for a bit of colour! Also you can prepare the parsnips for roasting (as you like) and then par boil them (only a couple of minutes) and freeze for roasting when you need them.

    Stew/microwave the apples with other fruit (frozen blackberries for example) and sugar/sweetner for a compote. If you microwave themuse a reduced setting as they'll tend to boil up.

    Parsnips/carrots plus onions (pre fried to translucency in a little oil) can be turned into a vegetable soup - you might add a decent stockcube as well

    If you can't think of anything to do with the bananas then stick 'em in the freezer for now (doesn't matter if they're squishy even) and make banana bread later when you feel like it......
