how can i prevent these from breaking up when frying
i mash tatoes, make a ball coat in flour, then in whisked egg then coat with tandoori chicken coating.
any advice appreciated.

My recipe suggests deepfrying for a few mins and then finishing off in the oven (you can freeze them in between). Did you mix egg into the mash before you shape it? This also helps.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

Do you mix anything into the potatoes when mashing.
I like to use crème fraiche which holds them together well
And I never deep fry - just do them in the oven0 -
I was told to chill them helps kepp the shape to,before frying, in not too muc oil0

Hi like a previous poster i don t fry them just straight into the oven 190 for 25 mins.Much healthier too.
I also like to mash some cheese and onion into the mash (not so healthy)Life is short, smile while you still have teeth0 -
when you mash the spuds, add an egg. holds them together. and when you dip in egg and breadcrumbs, do it twice or they will always fall apart. then let them get cold. if you fry them with warm mash, disaster!!!0
