Can anyone tell me how to make a good tia maria, I have not made it for ages, But I thought i used double cream slide it down a cold tea spoon and bobs your uncle!!!!!!!!!! No it looks like a lava lamp!!! HELP:D

If you mean a calypso coffee, made with tia maria and topped with cream, I usually whip the cream first so it sits more easily on the top.

I've done a Google and found lots of recipes like this - no cream though
Do you mean Irish Coffee
That needs a lot of sugar in the coffee, to alter the density, so that cream will float.
Edit - Calypso coffee - that's the one - Irish Coffee is with Whiskey

My understanding is the cream will only sit on the top properly if you put sugar in the coffee. Not sure why. I used to do this regularly at xmas time and friend put me right, was the only time I put sugar in my drink.WL 11 st 5lb as at 050109. 160209 11st 2lb

Hiya,
Yes you do need to put at least a small spoon of sugar in the coffee! The use a warm spoon, which you turn upside-down and put the 'point' of it against the side of the cup/glass (inside obviously) so that it is just touching the surface of the coffee, and pour the cream gently over the back of the spoon...
Or cheat and use 'fizzy' cream, serving it quickly before it all melts away to nothing!!!!!!

WARM spoon, i thought the spoon had to be cold, so I would run it under cold tap, so maybe that's where i go wrong0
