Some pickling advice please

I have some overwintered beetroot I want to pickle. I've bought a large jar of Haywoods pickling vinegar which seems overpoweringly strong. Can I dilute it with water and still preserve the pickling ability? if so, by how much can I risk diluting it by?

Diluting the vinegar will be risky as there will be more chance of beasties surviving in it as the acidity is not low enough (in pH terms). If you want your beets slightly sweeter, add a heaped teaspoon of brown sugar to each jar as it mellows it just enough without being sickeningly overpowering.0

If it helps any I just use ordinary Malt vinegar when I pickle beetroot.I never buy pickling vinegar and it tastes just as nice
