When Is an Oat Not An Oat? (for flapjacks/cereal bars)

    mmm cinnamon. Hadn't thought of that. I bought cinnamon about Xmas time as a lot of recipes use it, but not got round to using it. I should try to remember to use that!

    I'm working with this no-bake recipe, using a microwave:

    And they were instantly brilliant.

    First time it came out lovely and soft and chewy. I added dessicated coconut and sultanas and topped them with chocolate.

    Second time I reduced the golden syrup by about half and it set faster. I mixed in dessicated coconut, glace cherries, walnuts and mixed citrus peel.

    The third time I thought I'd try a different shape, so I just made the basic mix and this time placed just glace cherries into the bottom of a muffin tin then squashed the flapjack mix on top - once set and turned over, these came out as brilliant cherry-topped individual flapjacks.

    Now I'm ready for the fourth batch!

    I live alone and am using this recipe because 4 minutes of an 800watt microwave is cheaper than having a whole oven heat up for half an hour before baking flapjacks for 20 minutes, in an oven that probably runs at several kW/hour. I only use my oven once a week max because it only has one shelf and takes so long to heat up.

    Just a quick question... Thanks for the recipe, I am going to try an make some for my DH...

    Now, I want to use cranberries, desiccated coconut and chopped mixed nuts... And possibly some rice crispies to make them a cross between a flapjack and cereal bar!

    The question is.. Can I substitute some of the oats for equivalent weight in rice crispies? And Do I use the 5oz chocolate allowance for my cranberries/coconut and chopped nuts?

    Advice muchly appreciated!!!!

    To be honest, I don't know the answer ... why not try it and see. I'd not do it weight-for-weight though, I'd replace it by volume. It's the rice crispies that would throw it out by weight.

    The bottom line is: chuck anything in, just give it a go. By giving it a go you've lost nothing. Your stuff will taste gorgeous anyway... so you can still eat it, you might just need a spoon if it hasn't bound, or custard if you've put too many ingredients in :)

    Thanks PN, hadn't thought about the weight/volume issue with the rice crispies! DH is away at the mo, but is due back tomorrow, so I'll have a go tomorrow... Should be fun! :)

  • For Jenny74 and anyone else who is interested in using rice crispies!

    I found this on BBC Good Food site, another "no bake" recipe. Says "melt in a saucepan" but I am sure the jug and microwave method will work fine.
