made up recipe success!

Options
last night I intended to make Nigella Lawson style mac cheese with eggs and evap milk instead of a white sauce, got everything started then realised I'd used the last egg making buns for ds to take to school event. Couldn't be bothered to make a white sauce at 9pm on a friday night so whisked half a tub of cream cheese with some full fat milk, finely grated the cheese and used that as the sauce for pasta, peas and bacon, bubbled under the grill til crispy and it was even nicer than 'real' mac cheese, think I'll always do i that way from now on.

Ironically i only had the cream cheese cos it was left over from icing said buns!

    That ability to look in the cupboard/freezer/fridge and know that you can use a little bit of this, that and the other to make something delish!

    I always use cream cheese as a sauce for pasta. I used to make a white sauce but one day couldn't be bothered so thought I'd try the cream cheese instead and I've never looked back. It's so much quicker & easier and I've normally got cream cheese in the fridge, I have even just used cheese spread (from a tub or triangles) when I've got no cream cheese in!

    Congrats on a "new" dish Rachbc!! Feels sooo good when you're sort of pushed into a corner, try something new and it really works! :T
  • Creme fraiche also works. Full fat variety, of course!

    What a great idea :D I've got mac cheese on the menu for this week coming so I'll def use cream cheese instead. I've got some with garlic & herbs which should add a yummyness to it.

    Just had a look in the freezer & there's a tub of creme fraiche in there too which I slung in as it was nearing it's use by - that'll go in too :j

    Moiliere Glad to see you posting I missed your posts when you were busy. Enjoy the valentines choccies! My dh just rang to say he was in Asda picking up some beer medicine & did I want anything - the old romantic :rotfl:

    I have done the same thing with leftover cream cheese. Is very yummy, esp in a spinach lasagne!
