Tesco Food Club recipe

Does anyone still have the last Tesco Food Club magazine? There was a recipe in their 'thrifty' section for a Lamb Hotpot type dish made with a packet of soup broth mix. I seem to have been uncharacteristically tidy and either thrown out my copy, or put it in some very safe place. As I have to feed a number of people next week, I would really like to try the recipe, so if some kind soul still has a copy, would you post it here for me? Many thanks.

  • I don't have the magazine but I did look on tesco's site and found a Lancashire Hotpot listed in their new recipe section.

    200g/70z tesco soup and broth mix
    1 chopped onion
    1 carrot, peeled & diced
    2 chopped celery stalks
    Large pinch dried thyme
    1 litre/2pts chicken stock
    4 tesco frozen lamb chops, thawed
    1 large potato, peeled and thinly slice
    1 tsp olive oil
    400g/140z washed kale

    (1) soak the soup and broth mix overnight according to the packed instructions
    (2) preheat oven to 190C Gas 5
    put the soup mixture, onion, carrot, celery, thyme and chicken stock in a large
    casserole. Bring to the boil and simmer for 10 mins.
    (3) Add the lamb chops and put the potato slices on top. Drizzle with oil and bake
    for 30 mins
    (4) Meanwhile, blanch the kale in hot water for a few minutes and serve with the
    hotpot
  • Hearty Lamb and Barley Hotpot
    Serves 4
    Skill: A little effort
    Prepare: 10 minutes plus soaking
    Cook: 40 minutes
    Cost: £1.21 per portion

    200g (7 oz) Tesco Soup and Broth Mix
    1 onion, chopped
    1 carrot, peeled and diced
    2 celery stalks, chopped
    Large pinch dried thyme
    1 litre (2 pints) chicken stock
    4 Tesco Frozen Value Lamb Chops, thawed
    1 large white potato, peeled and thinly sliced
    1 tsp olive oil
    400g (14 oz) kale, washed

    1. Soak the soup and broth mix overnight according to packet instructions.
    2. Preheat the oven to 190C/170C fan/Gas5. Put the soup mixture, onion, carrot, celery, thyme and chicken stock in a large casserole. Bring to the boil and simmer for 10 minutes.
    3. Add the lamb chops and put the potato slices on top. Drizzle with oil and bake for 30 minutes.
    4. Meanwhile, blanch the kale in hot water for a few minutes and serve with the hotpot.

    thanks for posting the recipe I was intrigued after I saw the request :D
    Think this might work well as a bung it all in jobbie in the slowcooker too
