Hugh Fernley Whittingstall - Chorizo recipe

On one of the HFW programmes, Hugh made a chorizo sausage mix, which could have been made into sausages, but he used as tiny meatballs. Does anyone have the recipe please.

Fabulous. Thanks. So whereas shop-bought chorizo is classified as 'processed' - does this escape it? Is it too good to be true? Relatively healthy chorizo? Yay! x0
