I've found a pack of cooked beetroot (vacuum packed) lurking in the bottom of the fridge but noticed it has a November sell by date on it 
I haven't yet opened to it to do a sniff/taste test but it certainly looks ok so I'm wondering whether it would be ok to still use? I fancy making the beetroot & choc muffins posted on the other thread :drool:

If it is vac packed it might be ok, I buy cooked beetroot from the market and if it doesn't get used it goes slimy in just about a week. If it's packed in vinegar it would probably be OK if it is sealed...dare to taste?0

Vacuum packed will prob be ok, but the easiest way is to open and see!!!!0

Well, I opened the pack this morning and it all smelled ok, just as I'd expect it to smell, and not slimy or mouldy or anything, so I've made the muffins :j

once opened tesco organic vacuum packed beetroot doesn't last that long. Just had to chuck out nearly half a pack that had growths on.

Mmmmm, send one over to me! When I used to work in a beetroot factory (no laughing ladies and gents!), we did vacuum packed beetroot and well, the use by/best before date is just set by the supermarket and the guidelines they lay down. We had some in store that lasted FAR longer!
