Has anyone made gluten free rolls?

My ds's gf can't eat gluten. I just bought some rolls 4 for £2 in mr S. So has anyone tried making them. Do you just do it in the breadmaker using the normal flour instructions? As she is always here I thought I would try making them. I wonder if they would freeze also as I know the ones I buy are vacuum packed separately. I could do with having a few ready. I bought some gluten free flour.

  • My DD has Coeliac disease too and she can't have any contamination on her food from gluten - eg she can't make toast in the same toaster as her OH in case a crumb or two gets on her toast. I don't know if this might apply to a breadmaker (I don't have one) but it's worth bearing in mind.
  • She is not coliac it just makes her ill / bloated. Anyone ?

  • my youngest cant eat wheat and potatoes amongst other things. Ive tried many options for her, the problem is she hates all of them.. A friend of mine is a bread making teacher and has made her man different kinds as trials but we gave up. I have to say rice flour was a pretty reasonable option and is also good in cakes.
    several of the breads we tried were frozen and eaten bit by bit and they seemed ok.
    Ihave to say that gluten free bread was better as toast rather than as sarnies but thats personal choice I suppose

  • Another thing I have found is that gluten free flour makes roux sauce lumpy. I am sure it's not my cooking ability as my roux with plain flour is ok. I made her macaroni cheese for tea and couldn't get all the lumps out of the sauce. (gluten free pasta) it is very difficult as she is also vegetarian as is my ds. When I read the packets even qourn and soya mice have wheat in. She seems fairly healthy as she eats a lot of fruit and veg., but apart from that seems to live on rice. I am trying to give her a bit of variety, but it's expensive and a bit trying.

  • where do you live i have a packet of gluten free mix that i wont be using and can make bread with it - i tried it as bread makes me very unwell but its the yeast/fungus for me as mushrooms do the same thing.

    Use rice flour instead of G/F flour when making sauces, it doesn't go lumpy...it absorbs more liquid tho than normal flour so make sure you add enough milk.

    haven't found a decent g/f bread recipe yet, we've tried making it by hand and in a bread maker and have given up! OH is a coeliac so he gets his bread and pasta on prescription now
  • I made the gluten free bread recipe on the back of the doves farm bread flour packet yesterday.

    And it was really nice. Its much denser and abit more cake like than normal bread but still dead tasty. Boyfriend said it was very good toasted too.

    Not sure if it would work as rolls or not...maybe give doves farm an email?

    My favourite gluten free bread is baked at a health food coop in Brighton called Infinity...yum yum.
