what could I cook with this?

Sorry if this is in the wrong place, have been searching for the correct thread and can't seem to find one.

I've got some creme fraiche and mozzarella on the turn that need using up, also got some gnocchi, would it work to make a kind of cheese/creme fraiche sauce for the gnocchi (I've got mushrooms, onions etc as well). Wondering if that will be too cheesy, I think I prefer the idea of the mozzarella in a tomato based sauce.

I could always use the creme fraiche in something else..

  • I'm not convinced mozzarella makes a good sauce - it's a melting cheese and as you know gets very elastic.

That's kind of what I was thinking. Other option might be to use that to make a pizza and freeze, then use the creme fraiche with the gnocchi.

Does anyone know if pizza freezes better before or after cooking?

You can use creme fraiche in place of double cream in soups, if you have any veg that looks past it's best.

I think the gnocchi would be better in a tomato sauce and topped with the mozzarella.

Sliced mozzarella makes a lovely salad with tomato and leaves of basil, drizzled with a little oil and served with crusty bread.

Though you can freeze them both until you need them if you're unsure of what to do :)
