Marmalade Question

Made Marmalade for the first time last november which was went a bit wrong..The Jam and Chutney were fine:T
The marmalade(lemon amd lime) was a bit runny I put it in the fridge to see if it would set a little bit more...Opened about 2 weeks ago though still a bit runny tasted absolutely fine About half way through a jar an since opening its set and the right constency :rolleyes: but has gone cloudy
THe marmalade tastes scrummy Hubby won't touch it More for me:p

I know the lact of pectin caused it not to set ...I definately boiled it for ages and wrinkle tested just could not get wrinkle properly:o
Going to get a bottle of pectin next time instead of the jam sugar...But does anyone know why has it gone cloudy ?

  • Have tried making marmalade for the first time, followed Delias recipe ensuring the sugar was thoroughly gone before boiling. The marmalade has got a lovely colour, but very sweet taste and has almost set like toffee:confused: what have I done wrong please?
    (Usually make jams in summer very successfully,didn't think it would be this difficult:rolleyes:)

    if marmalade is boiled too long it sets too much ...i made some that was like a jelly tablet....ifu cut up oranges and expose the seeds pith etc i would of thought there would be enough pectin without adding liquid pectin...i would say is its too runny u havent boiled it enough....i tend to go with runny as it more usable than too set imo....do u do the wrinkle test on a cold plate ? it might be worth buying a thermometer and doing the boiling more accurately if u intend to make a lot.....id agree with poster than said cold fridge is making it go cloudy...still edible i would of thought
