Lots of meat from butcher. Looking for suggestions

I am new to all this OS stuff but i have learnt alot so far.

You've convinced me to buy a slow cooker, i decant soaps into squirty bottles, made pizza for the first time, and i love the hobnobs!!!

So after the thread the other day, i went to see my lovely local butcher (who is a star!) He sold me all this for £58...

1lb steak mince
1lb steak cubes
Rolled Pork shoulder/rib
Lamb joint
Beef brisket
(all 3 a good size)
4 Chicken breasts
Haggis
8 Pork and apple sausages
8 Pork and sage sausages
4 Pork Chops
4 Lamb chumps

So now i just need suggestions on what to do with it all and i thought i would ask you guys as you always seem to come up with the best ideas!!! :)

    chuck it all in the freezer and take it out as you would normally buy it

  • Oh yup, thats what i've done :) But im not sure what to cook with it. I dont want the usual boring stick it under the grill. I am looking for some tips or suggestions. Also so i can spread it out and make it last longer.

    Kebabs with the steak cubes with some Peppers and Onions........yummy!

  • using some of the steak mince, I would make a batch of meat balls & burgers,

    my recipe is (soz I don't weight stuff)

    bread crumbs (a few handfuls say 2 slices)
    approx 1/2 the mince
    some herbs & spices - I change it every time examples of what I have bunged in are garam masala, curry powder, ground coriander, mustard powder oh ground nutmeg is so lush in this use your imagination with this one!
    I always add mixed herbs (italian season works a treat) (a handful)

    mix it together, very theraputic

    I sometimes add an egg, but only if it hasn't binded.

    Shaped some into small balls and some into burgers.

    roll the balls in cornflour (this is not ness) and grill, turn until brown or you could fry, which ever takes your fancy, add to the sauce and cook for further 5 min ish.

    For the meat ball sauce, I use garlic, onions & peppers fried in a little oil, then I add a can on chopped tomatoes, tom puree & mixed herbs (you can bulk make this and use this as bol sauce, quick pasta or pizza tom paste but you have to blend it a bit)

    I put the burgers in the fridge and have the meat balls first, with pasta, you can sprinkle fresh herbs over to serve (parsley is lush as is basil)

    Hope you can follow the instructions!
  • Sausage casserole is good

    1 onion
    1 carrot
    splash of olive oil

    Fry onion and carrot until browned

    sausages, cut into 1 inch lengths
    tin of kidney beans
    tin of chopped tomatoes and herbs
    1 teaspoon chilli powder
    1/2 teaspoon cumin powder

    Add everything to the pan and add just enough water to cover. Or, if slow cooking, just bung everything in and turn on. No extra water. Can add peppers or other veg if it needs it. Even potatoes. Simmer until tender. Taste and season. Thicken with cornflour if required.

    Anything that involves cutting up the meat will make it go further than serving a piece of meat on the plate. It makes it look more and is easier to mix with pulses/beans/veg/rice/pasta etc to eek it out.

    So casseroles, stews, pies, stir fries and kebabs are all good.

    A good book to borrow from the library is Hugh F-W's Meat book- it has a recipe or idea for all the cuts of meat.

    steak mince (remember to bulk out with lentils or oats)
    cottage pie
    chilli
    savoury mince
    spag bol
    lasagne
    mince beef and veg pie

    steak cubes
    beef kebabs
    steak pie
    beef and tomatoe casarole(sp lol)

    sausages
    toad in the hole
    sausage and stuffing pie
    or just sausage and mash yum

    chicken
    breaded chicken coujons
    chicken veg casarole
    chicken veg pie
    chicken leek pie
    stuffed chicken

    might list more when ive woke up properly lol

    Some great ideas. With the mince I would make up a generic mince and veg dish to freeze. You could have it as is, in a cottage pie, or in pastry pies. You could also add tomatoes and garlic for a bolognese to use with spaghetti or in lasagne, or add the toms and garlic with chilli and beans for a chilli, etc, etc :) The other stuff I would probably freeze as is, and then just defrost as wanted like others suggest. I think that lot would last me a year! :cool:

    I guess I am lucky the OH doesn't moan about the food I make - like bulking out mince with lentils or soy mince (which I can't even tell is in there actually.) He seems to enjoy it, which is surprising as his mother will make chilli for 4 people with 500g mince and the like - I have always find this way too rich tbh, basically just a bowlful of minced beef and kidney beans with bread on the side :confused: . Never quite sure if he always means the compliments regarding my meals tho, or is just slightly afraid of me...;) Either way... :D
