Very unusually, I've come to a dead end with tonight's meal. I have some fish (pollack, haddock, trout) poaching in vegetable stock in the SC, but haven't a clue what to do with it beyond that
(bad planning, I know.)
Has anyone got some ideas? Can't do my usual fish pie since I've no potatoes. I'm kind of stumped.

I'm intolerant of wheat, citrus, grapes, grape products and dried vine fruits, tomato, and beetroot, and I am also somewhat caffeine sensitive.

You can make a white sauce with the stock and some milk. No real idea about quantity as I do 'bucket cookery' - throw it in and see what happens - but it could be something like this: Melt some butter in the microwave (about 1 tablespoon) and mix in about 1 dessertspoon cornflour. Whip in 1/4pint of milk and then add stock to desired consistency. Heat in microwave until boiling, stirring every minute. Taste and season. Put fish under sauce.

Have you got any bread that you can make into breadcrumbs? I'd thicken the stock and then transfer everything to a dish and then top it with a mixture of breadcrumbs, grated cheese and herbs and salt and pepper. Brown in oven. My family loves this. If you don't have breadcrumbs porridge oats work just as well with the cheese.0

Finely chop some onions and peppers and fry them, then pour over the top of the fish with a sprinkle of breadcrumbs and put under the grill for a couple of minutes.
Or pour some salsa sauce on top of the fish and sprinkle some cheese over it; again, under the grill to heat the sauce and melt the cheese.
