blancmange

Options
After looking through some old style cookery books, I thought I'd have a go at blancmange as I'd never tried it
I made it with almond essence and a bit of ameretto, then decided it tasted a bit bland so melted some chocolate and mixed half the mix into it, then layered it up and grated some choc on top.
It was lovely, def. making it again.
Think this needs to make a comeback - such a simple pudding and quite healthy really.

Recipe if anybody wants it -

1 pint of milk (would be nicer if some of this was cream though)
4 tbsp cornflour
flavouring (approx 1 tsp if using vanilla/almond/lemon essence or a few tbsp of fruit puree/melted choc)
sugar (to taste)

Put cornflour into a cup and make into a paste with some of the milk
Pour the rest of the milk into a pan with the flavouring if you're using an essence and bring to the boil.
Once boiling, put a ladle full into the cornflour mix and stir, then pour back into the milk, turn the heat down and simmer until the mixture thickens, stirring all the time.
Add sugar to taste and stir till dissolved.
Take off the heat and pour into a mould/glass bowl/ramekins and leave to set (approx 2hours or overnight)

If using melted choc or fruit puree to flavour, just stir these in once the mixture has thickened and been taken of the heat.

    We used to have hot blancmange when we were kids.
  • This has reminded me I've been looking for the packs of mixed flavour blancmange in Mr M's and couldn't find them. Must ask DH to look in Asda when he pops in to buy naughty lunches for his work. I'm not driving 10 miles each way to go shopping.

    I didn't think of making from scratch with cornflour !

    I've just made it from scratch with the OP's recipe! Put 1.5tsp strawberry flavour and 1/2tsp pink food colouring in... also 1.5tblsp sugar.

    So not so great from the sugar point of view, but it's a good way of getting an extra 1/2pint of milk into my two children :D

    Looks lovely - just waiting for it to cool so i can put it in the fridge :)
