lemon/lemon meringue pie

Hi all,

After a bit of advice if pos. I have some lemons which I need to use and I am planning on making a lemon meringue pie, but I don't want it for this weekend as I already have anoher desert planned so I was wondering can I

a) freeze lemons?
b) make the lemon meringue and freeze that (if I manage to resist the temptation of eating it)?
c) have two desserts this weekend and put it down to a judgment error?

What would you do?

    You can freeze the lemon juice, I wouldn't advise freezing the whole lemon. You can also freeze the zest. Or you could make the pastry base with the curd in and freeze that, then defrost and put the meringue topping on prior to cooking.

    Good luck! I love lemon meringue and haven't made it in ages.

    Make the Lemon Meringue pie and then freeze it.
  • You could always make the curd and bottle it (jar it?) - then you could have pie without too much trouble whenever you wanted it.
