  • Raspberry Buns

    A variation on Rock cakes

    Use the same ingredients but omit the fruit.

    When mixed, roll into 6-8 balls, put on a greased baking sheet and then squash down sllightly.

    Put a dent in the middle of each ball and fill with half teaspoon of jam, shpould be raspberry for the name but any will do.

    Bake as Rock cakes.

    My children loved making these as they got their hands messy and could lick them clean - Ugh!

    I'd forgotten all about rock cakes. I haven't made them since I was in school, I'm going to have a try at making your recipe exlibris, thanx.

    Does it have to be Corn oil? I was going to make thses now but only have Sunflower oil.

    Not sure about the sunflower oil, but do you have butter which you could use instead?

    I used vegetable oil when I made my muffins and they were fine, this is what was recommended in the Nigella recipe anyway.

    As for the jam donought muffins, I also made them with lemon curd and apparently they were lovely...I don't like it so I didn't try them!

    Many thanks Fay.I am over run with lemon curd as my Dad brought so I'll try that.
    My Dad bought some as DS likes it but I already had a jar.

    I just made the rock cakes recipe posted by Mschappie. I'm not keen on raisins so I used about 3-4oz of coconut. They are really nice (well the ones I didn't overcook are!). They could possibly do with a little more sugar.

    sorry only just came across this again!
    Can use sunflower oil no problem, I have done many times - any vegetable oil that is not strongly flavoured should be fine.
