50% failures in new panny BM & frozen bananas aflame !

what I am I doing wrong?

got my new panny breadmachine on Friday and been experimenting:
1st loaf was wonderful (basic XL white, light crust):j
2nd loaf was a brick, didn't rise at all (quick bake IIRC?, got muddled with the controls)
3rd loaf was great ( apricot and walnut on raisin bake)
4th loaf was sunken and fed to the wheeliebin :mad:

I put the ingredients in the pan on the countertop and wonder if I mixed the water with the yeast on lifting it into the breadmachine - it's quite a tall machine, a big lift for a shortie. could this can spoilt the yeast during the rest period for the 4th loaf.

any tips for success would be much appreciated !
Obviously I'm doing something wrong.:o

I don't actually get to eat any of the successes as have wheat allergy. once I've got the hang of it, plan to try making spelt and rye bread.

onto my other problem !
I set fire to the frozen bananas in the microwave !:eek: Honestly, I am not usually such a clutz.

I was so chuffed with being able to make good use of 2 bunches of spotty organic bananas. I usually make banana bread and banana smoothie for DS and DP,and don't get a look in myself.

I've been taking a banana out for the freezer either the nigght before to defrost overnight in the fridge. or if I forget I put it in the m-wave for 1 min, then add it to my porridge. what do other people do with frozen bananas?

Today I was making double portion of porridge, so took 2 nanas out, bunged in the m-wave, to thaw them out enough to add to the oats. the tip of one banana burnt and the piece of kitchen roll was in flames. oops ! Nothing major, nothing wasted, but not a good example in front of the kids !:whistle: :whistle:

    Congratulations on your recent waistline-increasing addition! LOL!

    The thing my Panasonic manual says is to put yeast in first so that it doesn't get wet, so it could be as you suggest.

    Also, I find the temperature of the water crucial .. hand hot / tepid works for me.

    Not sure about the bananas, maybe it was because they were on paper towel that they caught fire??? With the bread machine, make sure you keep the yeast away from the salt, i know that salt can 'kill' the yeast so that will affect how much it rises.
