I made banana cupcakes yesterday for my kids lunchboxes. So easy using store cupboard ingredients and two brown bananas. I got the idea from the Tesco magazine, will be trying the apple flapjacks next but didnt have golden syrup.
125g butter
125g plain flour
125g caster sugar (I only had granulated, turned out fine)
2 tsp baking powder
2 eggs
2 bananas
Cream butter and sugar together. Beat eggs, mash banana, mix all ingredients together and place in 12 paper cases. I'll be doubling this recipe next time.“A budget is telling your money where to go instead of wondering where it went.” - Dave Ramsey0 -
hiya i made the cupcakes the kids love them ive also made apple flapjaks, and the hobnobs recipe from here the kids feel spolit at the mo made somme lovely soft rolls last night and even hubby loved them gonna try the fruit kebab idea dont the apples go brownI made banana cupcakes yesterday for my kids lunchboxes. I make flapjacks mostly! The kids really like them, they're not the healthiest, but coupled with everything else in their lunchbox, its a balance (usually a homemade wholemeal roll with ham or tuna or cheese)
Also do jelly pots occasionally.
And lemon cake sometimes I'll make one in a loaf tin and give them a slice each.
Pots of grapes, any other fruit and carrot sticks, cherry toms.
looking forward to putting home grown strawbs in their boxes this year!0 -
These are really naughty so maybe best just as a very rare treat! My Gran makes us rice crispy cakes but made with melted mars bars. This is spread on a tray and topped with melted caramac bars. Pop in the fridge, leave to set then cut into little squares. Like I said...very naughty but utterly delicious!!!0

My little one is still at home with me but I have been baking for hubby's packed lunch again on request

I usually do flapjacks (not this week tho as ran out of oats) with this recipe:
50g granulated sugar and 50g butter melted in the microwave. Stir in 200g porridge oats and about 50g of dried fruit of whatever kind I happen to have. Put in a lined baking tin and bake for about 20 minutes at 190C. Leave to cool in the tray then lift out and cut into squares or bars.
Also popular was last week's fruit loaf:
Soak about 250g dried mixed fruit in 150ml fresh black tea for at least a couple of hours. Sometimes I have added orange juice to the soaking mixture too. Cream 125g butter and 125g brown sugar. Mix in 125g plain flour, 2 tsp mixed spice or cinnamon, 2 beaten eggs, then fold in the fruit mixture. Bake in a greased loaf tin for about 50 minutes at 180C, or until a skewer comes out without any uncooked mixture.
He also used like plain HM biscuits (often jazzed up with a pinch of cinnamon - sometimes ices and even with half a glace cherry on
) to go with a morning or afternoon cuppa. Might have to make those again soon for him. Love and compassion to all x0 -

You could always dip the apple in a bit of lemon juice to stop it going brown.0 -
I put this idea in the left overs thread, but it might be of use here too.:)
I take my potato peelings and scrub them well, taking off any unwanted bits. Paint them using a pastry brush, with cooking oil, flavoured if you like, or just vegetable oil. Bake them in a hot oven for about 15 to 20 minutes, or until they are really crispy. If you like you can sprinkle parmesan, or any other flavouring like paprika, mixed herbs, chilli flakes etc over them for the last few minutes of baking.
Nice crispy snacks and good with a yoghurt dip or HM salsa.:)0 -
