Hi All,
I am very keen on making marmalade but I hate spending hours finely slicing the peel, and I think a marmalade slicer would be a huge help to me, I've seen ancient versions on ebay but wondered if anyone knew of a modern version at a reasonable price available anywhere.
Thanks in advance!

Hia,
This mandoline from Lakeland (www.lakeland.co.uk) may be useful: Chef'n Sleekslice: offers 4 thickness settings – turn the dial to adjust, can be used over a bowl, free-standing or hand-held. £15.65. Product code: Ref 12628
Or maybe one of their Microplane® Gourmet Graters.

I've got an old Spong 730 (suction base version of the 630) slicer/grater, but I use the pressure-cooker whole fruit method which makes soft peel. My mother can only cope with 10mm long pieces, so I'm still hand cutting. I tried a double-bladed mezzaluna/hachoir, but the peel gets jammed between the blades. I thought about using an egg-slicer this year, but I'd still need to cut the 10mm strips of peel and the slices would be thicker. Something like the JML Nicer Dicer would be good, if the blades were redesigned to produce strips. Then again KwikSave, when it was running, used to sell Danish marmalade with diced peel...0
