Futureproof career - Any Suggestions?

Seems like few professions are unscathed by the recent downturn. For someone looking to re-train and start a new career does anyone have any thoughts of what professions will be least affected?

When I went to an interview in the NHS the other week they said the people will always need funeral directors and the NHS. Nursing might be the best option, plus you get a bursary to train (well you did a couple of years ago) and after training, agency work is proving to be quite lucrative at the moment (if the papers are to be believed). Good luck with whatever you decide to do!
