What can I cook for my veggie friend?

My (veggie) friend and her (meat-eating) children are comng to tea next week, and I'd love to cook a meal that we would all love. I don't have a clue about veggie cooking, and I need your OS help, please.
Any ideas/recipes would be fab. Thank you in advance

Why not do mexican wrap thingies?

We've started eating vegetarian 2 times a week. Last night I made a chilli with aubergine and black beans, which was delicious (and there are two more meals worth of it in the freezer). Tomorrow I'm doing a vegetable stew with cheesy dumplings. Or maybe a broccoli and cheese tart. Other yummy meals we've had recently include a curry with mushrooms and potatoes, served with rice & lentils cooked together, and a kedgeree made with lentils instead of fish and boiled eggs (we have a lot of pulses to use up). One of my RSS Feeds is to Jeenas Kitchen, I can highly recommend the site to browse, gives step by step pictures for the recipes and includes recipes that are Gluten free or eggless for example. Had a quick look and saw this one for Veggie Kebabs

3 bean chilli in wraps with salad, guacamole and sour cream. For the chilli just chop an onion or two, fry gently for a bit, add garlic and chilli powder, then add in several tins of beans and a tin or two of tomatos depending on quantity. for beans I usually use red kidney and cannellini. A tip I got from here is to also used washed off baked beans, cheapest possible, these mush up and thicken the chilli. Simple and very tasty0

Mine was based on something by Simon Rimmer, but it's not exactly the same.
Chop up one or two aubergines, into 1 inch cubes. Fry until golden in veg oil - no need for fancy oil with this one. Take out and put to one side. Add chopped onions to the pan, I also included courgettes (they were in the veg box too!!!). Season with cumin, coriander, cinnamon, salt and LOTS of chilli powder or paste. Add tinned tomatoes, 1 or 2 depending on how much you have made. Once it's bubbling nicely, add in some garlic paste (I use the stuff in tubes, if you don't, put it in earlier) and double check for chilli-ness. Put the aubergines back in. Cook for about 15 mins, then add in 2 tins worth of drained and rinsed tinned black bean. Cook for another 5 mins, check seasoning again and then serve with rice/bread/cornbread or whatever you like.Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000
