Wedding Breakfast and reception

Hi all I was wondering if anyone could give me some advice or tips on the wedding breakfast and evening reception.
We were going to have an evening reception only but the more I think about it the more I thinkI will regret it if we don't have a sit down meal. We are having a registry office wedding and for the reception maybe the local leisure centre or a welfare type club.
I would have to arrange outside caterers for a sit down meal but i'm not sure of what I should be looking for and I would need caterers again for the buffet in an evening.
How many guests should I cater for in an evening?
If anyone could give me and advice or tips it would be most helpful!

all guests should be catered for the wedding breakfast/sit down meal, and for the evening buffet we catered for 70 % but some say 50 % as the day guests wont eat much at the evening do, but ours did!0
