I hate to mention this, but I've got one too and it's the worst pan I've got for making jam/marmalade
Might be worth trying a different pan if the other suggestions don't work out - but you really need a pan with a very, very solid base.Warning ..... I'm a peri-menopausal axe-wielding maniac0 -
I make all my jams and marmalades in the pan part of my pressure cooker. The base is very heavy and its not too large. I had a disaster when I used my large heavy stew pan to make marmalade, because the base is so big too much water evapourated too quickly and I ended up with lemon lime toffee glue0

I use the base of my steamer - works perfectly, but I think next time I'll use my splatter guard - I spent ages cleaning marmalade spots off the floor0
