Will lemon curd cake and tarts freeze?

Hiya

I have a jar of lemon curd to use up... I was planning to make a batch of mini lemon curd tarts and a lemon version of Victoria Sponge using lemon curd for the filling.

Does lemon curd freeze ok?

Cheers

I'm not entirely sure but I would say no. It won't harm you if frozen but I think the texture will be runny. Could be wrong though.

I use hm lemon curd in tarts and always freeze them and they're fine. Don't know about the bought stuff but I would give it a go.

  • I used up a leftover jar on lemon curd tarts just before Christmas. I froze most of them and they were fine once defrosted. Having said that, they weren't in the freezer for more than a couple of weeks before all getting brought out in small batches and eaten fairly quickly.
