Hiya
I have a jar of lemon curd to use up... I was planning to make a batch of mini lemon curd tarts and a lemon version of Victoria Sponge using lemon curd for the filling.
Does lemon curd freeze ok?

I'm not entirely sure but I would say no. It won't harm you if frozen but I think the texture will be runny. Could be wrong though.0

i think it would seperate if frozen and do u no harm but look grim iykwim...id make a victoria sandwich with it then have it on toast to use it up....it would prob last a bit long er in the fridge....its not gales is it ??onwards and upwards0

I use hm lemon curd in tarts and always freeze them and they're fine. Don't know about the bought stuff but I would give it a go.

why i asked if it was gales (im not a cupboard stalker) is that for some reason it(gales) it was 20p in tesco for a short while and i have a few (quite a lot) of jars myself i was wondering what to do with...i might give frezzing ago with i little bit and see how it goesonwards and upwards0

I used up a leftover jar on lemon curd tarts just before Christmas. I froze most of them and they were fine once defrosted. Having said that, they weren't in the freezer for more than a couple of weeks before all getting brought out in small batches and eaten fairly quickly.0
