Stuffed chicken breast without using parma ham/bacon?

Ok lovely partner has requested stuffed chicken breast this weekend but she won't eat red meat. So that means I can't wrap it in parma ham as I would do normally.

Any ideas? I thought I might cook the chicken anyway then ram some mozarella and cherry toms in for last 5 mins just to get them bit melty and warm? :confused:

    What about Quorn Rashers, or depending on how set against red meat she is cook the chicken as normal wrapped in the bacon/parma ham then remove it before serving

    what about making chicken kievs, with garlic butter and use up some of that stash of breadcrumbs you must have in your freezer ;)

  • Make chicken ballotine -
    cut chicken breast to open it out
    cover with cling film & batter it with mallet to thin out
    lay on a 30cm piece of cling film
    place desired filling in middle of chicken
    roll up using cling film to help, ensuring ends of cling film are twisted, end result should resemble a fat sausage.
    Place in a pan of simmering water for 30 minutes
    remove, allow to cool, remove cling film, then pan fry until outside of chicken is golden brown
    a bit fiddly but well worth the effort. I serve it sliced on a bed of risotto:j

    You been peeking in my freezer lynz? :D However as well as red meat aversion she won't eat garlic either - I sneak it in some dishes but chicken kiev might be pushing it slightly - nooooo dear, course it's not got garlic in it, just teeny tiny pieces of onion, honest ;)

    LOVE the chicken ballotine idea jwc! When you do yours what do you stuff them with?

  • I find that bashing the chicken til it is flat then wrapping it around the stuffing usually cheese and something then using cocktail sticks to pin it together works pretty well.
    Or if you want to use legs you can stuff herby cream cheese and sun dried toms under the skin and then roast it with mediterannean veggies - tis lush and you can bung it all in the oven and forget about it for half an hour!

  • have stuffed them with sausage meat (take skins off ordinary sausages) mixed with herbs & garlic (can leave that out) season with s&p, or stuff with sundried tomatoes & mozarella & basil or spinach & ricotta, if you have nothing else I have just stuffed them with mature cheddar. The first one is best I find. If you are making it make sure you wrap the cling film tight. Hope you enjoy it if you decide to make it:beer:
  • Turkey bacon isn't bad. I would ensure that you have a stuffing with a little fat in it - such as cream cheese, to ensure the breast stays moist as turkey bacon contains very little fat.

    Slice the breast in half, so you end up with 2 thin pieces, place in greased oven proof dish.

    Mix grated cheese, mustard and milk together, pour over chicken, season if required.

    Add cherry or cut up ripe tomatoes and bake at about 200 degrees for 25 mins.

    Vaguely on topic, with these types of recipes if you take a ball of the cheesey filling and freeze it then put it into the chicken it won't melt and go everywhere when you cook it.
    Sadly, you don't have any badges yet but keep trying! See what you could get........... oh boo hoo I am crying into my wine. :D
