    Over the last 8 weeks I have made the following
    Pear and Apple Chutney
    Apricot and Date Chutney
    Delia's Christmas Chutney
    Picallili
    Tomato Chutney
    Chilli Jam
    Pickled Onions
    Beetroot Relish
    Hearty Ale Chutney
    Strawberry Jam

    The last 2 were the dodgy ones - strawberry jam didn't set despite the set wrinkle test - will have to think of a use for this and the hearty ale chutney was very running and never thickened despite a lot of cooking.

    Also have some blackberry and apple gin infusing atm too ready to bottle up at the weekend

    Also planning to make Nigella's Christmas Chutney and then some marmalade out of the tins of sevilles from Lakeland for the first time using tins.

    The shelves are heaving under this lot - planning to give some as gifts and then hoping to sell a few jars at work too for between £1.50-£2.50

    Same here with the Hearty Ale Chutney - it didn't thicken properly so I spooned the thickest stuff into jars first and ended up with one VERY runny jar at the end, which I'm going to use up in stews and the like. Glad it's not just me! :)

    I always have trouble with strawberry jam setting (strawberries have very low pectin levels) - its the only jam I use jam sugar for and now it works - hope this helps.

  • Have some huge catering sized tins of plums-would it be posible to drain fruit and use to make plum jam? Would I need to add pectin? Have only ever used fresh plums.
    Any advice appreciated.

    Hi

    I have been given a lot of cooking pears and am looking for recipes for a pear chutney.

    I also have lots of cooking apples, so a pear and apple chutney would be great.

    I will also stew some pears and apples and freeze for use in puddings.... but any other ideas would be welcomed.

    It's sleet and snow outside and blowing 35 mph gales, so the outdoor jobs i am supposed to be doing today are cancelled so an afternoon of cooking will be great :D

  • I've made a pear,apple and ginger jam,using more pears than apples.It turned out very nicely.I used a handful of crystalized ginger,just to add a zing.The pears gave it a pleasant graininess.

  • My Mum made pear & ginger chutney this year, very scrummy it was too. I don't have the recipe but I think she just googled for one.

    This recipe caught my eye in the Sunday Telegraph Stella magazine yesterday. It's loosely based on a German recipe called Himmel und Erde or Heaven and Earth.

    The recipe caught my eye because the photograph of the dish in the magazine (richer colours and clearer picture than the online photo) made it look absolutely and mouth-wateringly divine, perfect autumn / winter food and it could be so cheap to make.
