Celeriac and Sweet Potatoes??

    You can make loads of Gillian McKeith recipes with sweet potatoes and my fav is the shephardess pie - you use the sweet potatoes as a topping. What I do is get a massive pan and chop corgettes, aubergines, butternut squash, peppers, carrotts, onion, garlic, kidney beans, black eye peas and boil them in some veg stock and then put them into a oven proof dish, add the mashed sweet potatoes on top and bake in the oven for about half an hour. It's delicious, really healthy and filling and it's fab for when you have got a sweet tooth because the sweet potatoes really curb the craving!!

  • Mmmm, celeriac and sweet potatoes are just about my favourite veggies. I like to peel and chop celeriac into soup, or steam and mash it into potatoes using a bit of black pepper and a spoonful of natural fromage frais, creme fraiche, or naughty cream,whatever I have in the fridge. Yummy. I also mash it with swede, carrot, sweet potatoes, whatever root veggies I have.

    Sweet potatoes I cook much as everyone else does, baked, roast, steamed, all of them totally scrummy.

    There is a Philadelphia recipe ad in my Closer mag this week using Sweet Potatoes. Bake in oven for an hour, scoop out flesh, mix with low fat philly, cooked bacon rashers, chopped cherry toms, refil skins with mixture and pop under the grill until bubbling. :D

    Just put in a sprinkling one day and it was really nice!

    Mash also good with chopped rosemary and red chillies fried in butter and then tip the whole lot into the sweet potato mash, yum!

    Celeriac, Sweet Potato and Apple soup is really nice too - recipe in Supergrub book, but you can probably work it out without it:

    I was just looking for a soup recipe to use up some celeriac I've got and you've posted one, and very yummy it sounds too! :D

    Now if only I could find the box I packed all my recipe books in, I have the HFW Soup Kitchen book in there somewhere :rotfl:
