chicken and leek pie!

Has anybody got a basic recipe for this as I have tried to find a recipe through google but am only coming up with really long winded recipes.

I have:
A pack of ready rolled shortcrust pastry defrosted
Some cooked chicken leftovers
leeks
various other veg in fridge: carrots, peppers, asparagus, onions, garlic

I don't know what to use for a sauce either :confused:

Please help i'm HUNGRY! lol

    Melt about 2 tbsp of butter in a saucepan, add chopped leeks and onion and cook until softened.

    Add about a heaped tbsp of flour and stir into the leeky mixture let it cook for a few minutes.

    Gradually stir in about half a pint of milk (or a mixture of milk and water or milk and stock) until you have a thick sauce. Season to taste.

    Add your leftover chicken and heat through.

    Pour into a deep pie dish/baking dish and top with rolled out pastry. Bake at 200 for about 30 mins.

    You can add other veg -carrots, mushrooms, frozen sweetcorn straight from the bag.

    A slug of wine is good too. Stir in some curry powder with the flour to make a curried pie.

    melt a nut marg add tablespoon flour heat a bit gradually add milk until u get consistency u want add fried leeks (chopped) put in shredded chicken put in to oven proof dish cover with pastry cook for required time..enjoy

    Cut up the leeks and fry them in a little oil, on a low heat, in a saucepan until they are soft. Don't brown them.
    Add 1 pint of stock or water with a stock cube and bring to the boil.
    Mix 2 rounded tablespoons of cornflour with a little water and add it a little at a time to the pan of liquid until the desired thickness is reached.
    Season to taste with salt and pepper.
    Put pieces of chicken into the pie dish and cover with enough liquid to come to near the top of the dish.
    Cover with pastry.
    Bake in the oven until golden.
    If there is any liquid left then warm it up and use it for gravy.
    If you want to add carrots then chop them finely and fry them with the leeks.

    When i make chicken and leek pie, i just make a basic white sauce and add the leaks, keeps it simple but tasty

  • When it comes to pies like this I am afraid I am a lazy moo and use a tin of condensed soup instead of making a sauce :o I stock up on the soups when they are on a really good offer and use them in pies and pasta bakes.

    P.S. Am I the only person who doesn't put pastry on their pies, but uses mashed potato instead (like you would for cottage or sheperd's pie). Serve with extra veg and you've got a meal in one pretty much!

  • A lot of people said that Jamie Olivers Turkey and Leek pie he did on his christmas show was very good - you could have chicken instead.

    some forums are saying that his leek quantity is in error and should only be 2lbs.

  • I often use condensed soups as sauces, need to be diluted a bit to the right consistency. The chicken or mushroom soups would be perfect, very easy and cheap. Great for a larder basic.
  • mmmm thanks everyone. I have just been looking at mr badexample v tigs78 chicken and leek pie challenge too, it has made me feel soooo hungry! Gonna try thriftladys recipe as I have flour and milk in. Am I right in thinking I dont put pastry on the bottom of the pie dish :confused: . Thank you X

    I can vouch for Jamie Oliver's one-I made it with leftover goose, absolutely delicious (you dont need to follow the whole recipe(I didn't)-but I would recommend the slow cooking of the leeks-ever so sweet yum yum
    I only ever do topcrust pies (no pastry in the bottom) partly because i use puff pastry, partly because it virtually halves the calories! (smaller bottom :D)
