well i have bay, rosemary, lavender, thyme ,oregano, and mint growing in the garden (somehow the mint is surviving winter outdoors) and indoors in the kitchen i have thyme and oregano, in nice pots!! so that they survive winter and because i use them so often!
as far as dried bay leaves, thyme, rosemary, and oregano are the only ones i really use,
and really soft leafy herbs, such as basil, parsley, tarragon, best to buy fresh and if you have extra make a herby salad, chop or blitz up with some oil and make pesto, or freeze!£5000 debt cleared thanks to MSE advice :money:0 -
I have had some really nice freeze dried Italian herbs from Aldi - perhaps not for the purist cook, good enough for me!
If you do get the dried herbs, which I do
then if you use them up really quick or throw them away
and replace them really quick then you get the benefit.

I grow quite a lot of my own, and chop 'em up and freeze them in little plastic tubs that I got from Lakeland (about 8 times the size of a standard ice cube, I'd guess). When I want herbs, I just break or scrape off the amount I want from the solid block.
Works for me.
BTW, I can't stand Lemon Grass, tastes like mouldy cardboard to me, rather than soap.If your dog thinks you're the best, don't seek a second opinion.;)0 -

I only keep my Basil in the kitchen as outside tends to kill it. All the other herbs are on the kitchen doorstep in pots so I can pop out quickly - even in the dark - and grab stuff. In fact, if I'm careful, I can pick them without leaving the house!
I'm still crap at remembering to do it though!
NO amount of tips can help with that, sadly...

If you grow herbs in the garden you don't have to pick them in the dark- cut off a long bit and have it in water like a cut flower until used up. I do this with mint for my tea.But a banker, engaged at enormous expense,Had the whole of their cash in his care.
