I have two pieces of cheese leftover from Christmas and I am a bit stuck on ideas on how to use them up now the guests have gone.
Both are white stilton - one has cranberries in it and the other apricots.
My gall bladder doesn't appreciate uncooked cheese so any cooking ideas would be appreciated (we are a bit fed up with variations of cheese on toast
)

I'd chuck them in a cheese sauce or on top of a piece of meat and grill it. Alternatively cut a butternut squash in half down the middle, cut off the sticking out top bit so you've just got the hollow bit. Remove seeds. Fill the hollow bit with spinach (defrosted frozen stuff is fine), stilton and pumpkin seeds or similar (if you have any) and bake at 180 until the squash is soft. Tasty and healthy.0

Thanks for this. I used the stilton with apricots in a cheese sauce today to go over some cauliflower, chard and leeks. Finished off in the oven.
It was yum!Thanks to MSE, I am mortgage free!

I used some of this sliced/crumbled up on top of a pasta bake, it was lovely!When life hands you lemons, ask for tequilla and salt and give me a call!!!0 -
I've got some left too ( with cranberries) and was thinking of stuffing chicken breasts with it, thought It might be quite nice cooked in the oven.Living as simply as we can
