My version of Jambalaya is always used with left-over chicken from the roast. I fry an onion and a pepper then add rice and chicken stock. I add some cajun seasoning, bacon or ham (if I have it), shredded cooked chicken, frozen peas and sweetcorn. Last thing to go in is a handful of frozen prawns. I also add herbs or other veg (chopped celery, grated carrots or spring onions) if these need using up from the fridge. Enjoy!0
