    Excellent, you have a good selection, knock yourself out and experiment.
  • Have a look on the Videojug website...or the Pataks website. They have videos of how to make curries, onion bhajis etc.

  • BBC Food website has good recipes. Made one the other night from the vegetarian society called Vegetarain Curry and added chicken. Didn't have all the ingredients so just subsituted with what I had. Is tomato based so no need for coconut. Have also made with red lentils.

    I would avoid ground spices generally. Ginger is best bought fresh.

    Generally you want to make a curry paste. Nutmeg is better suited to red meat.

    Generally cloves, curry leaves, cardamom, mustard seeds and cinnamon should be added whole, everything else ground.

    A curry paste can be made by grinding spices (for 500g chicken try 1 tbsp coriander, 1 tsp cumin, 2 cm fresh ginger (or 1 tsp ground), 1/2 tsp turmeric, 1 tsp black peper, 1 tsp chili powder, 1/2 tsp cinnamon; put in food processor with one small/medium onion and 8 garlic cloves, blend to a paste, add a little if necessary). Make oil hot (until shimmering) in wok/balti pan/casserole dish, add a twenty curry leaves, cook for one minute, add the curry paste fry until aromatic, then add the chicken, brown in paste, add can of tomatoes, sprinkle with cardamom seeds and simmer for about an hour.

    thanks everyone...i have ended up making a veggie curry with left over onions, garlic, carrots parsnips and potatoes plus lentils to bulk and thicken and some coriander to garnish. I have made two huge pans so there's plebty to see us through january lol.
