What to do with leftover beef, gammon and duck?

Hi all, I have searched the board for things like "leftover duck" but haven't come up with anything (must be doing it wrong) so I was wondering if anyone can suggest some recipes/ideas or point me in the right direction please.
I have a lot of leftover meat to get through, though I'm not sure how much longer it will keep, having been cooked on Christmas Eve.
I was thinking along the lines of various pies but not sure what to do as sauces in them, also don't want to live off pie for the entire week!
Any ideas welcome!
