Child-Friendly Recipes with no Rice or Pasta?

I was hoping to rack everyone's brains here.
DS1 is a Type1 Diabetic (5 years old) and whilst he can eat anything, certain food play havoc with his blood sugars. The two main culprit that give us trouble are pasta and rice. While we're not excluding them completely fromt eh diet (I don't thinkthat'd be either healthy or good as we like pasts bakes, home made currys.....) I'm trying very hard to expand the non-rice/pasta recipe base.
There are the obvious finsh fingers, chips and beans, roast dinners.. and then the not so obvious chicken, pepper and onion tortillas, tortilla-base pizza (normal pizza's a total nightmare for him) torilla lasagne, enchilladas....
Can anyone give me some more ideas for recipies to add to my 'repertoire' :rotfl: please? There's myself, DH, DS1 (5 years) and DS2 (17 months), non of us with any allergies

hmmm, well there are quite a few carbohydrates you can try out (see how his blood sugar levels are affected), cous cous, Bulgar wheat, or polenta. Lentils, gnocchi (Italian potato dumplings as an alternative to pasta), pita breads, or naan bread (as an alternative with curries) sweet potatoes, and squash.
All these can then be used in a wide range of meal ideas, some as an alternative to rice and pasta. others for alternatives to potatoes etc.
With carbohydrates they do say that different amounts will affect different people more than others, so while some people can eat 4 roast spuds, others can only get away with 1.A waist is a terrible thing to mind.0 -

Have you tried wholewheat pasta and wholegrain rice, or do they have the same effect on your DS as the white varieties? Likewise, would it make a difference if you tried making your own pizza bases using wholemeal flour rather than white flour?
You could always make fish cakes, fish pie (topped off with potato). What about sausage and mash with veggies or beans?
When I was a student, I used to make a curried lentil and bean crumble and you coul easily add meat to it too.

Some types of quiche.
Stir fries with mini corn on the cob.
Sauteed potatoes cooked in the oven with onions, tomatoes and herbs. Serve this with any meat or fish.0 -
Pitta bread pizzas for a change from tortillas?
Potato casserole - Basically sliced potatoes, onion, any veg you want, bits of fried bacon or fish, layered up in a greased casserole dish, pour cheese sauce over (or Condensed soup if flour a problem) grate some cheese on top & bake in the oven. Its sometimeas easier to parbil the potatoes whole for a bit before slicing them. Everyone loves this in our house!0 -

Nessie: Thanks for the suggestion but wholewheat and brown are the same. Without trying to be boringpastas and rice are slow absorbing into the body. His injected insulin only 'survives' 3-4 hours in his body where as pasta is digested over, say, 6 hours so there are a couple of hours where his blood sugar creeps up without insulin to deal with it. That's not so bad at lunch time as he has more insulin with his snack or dinner to counteract that, but when it's for dinner it means he stays high all night

If you can find a post by "Twink" you could pm her and ask for some advice. Her grandson is older than your ds and is also diabetic, so Twink and her daughter have had longer dealing with it. They're both lovely people and I'm sure they would have some ideas for you.0

Jacket potatoes with a variety of fillings, tuna , cheese, beans etc

Creamy chicken pie (poss with sweetcorn) topped with mashed potato.
Omelette
