Never seen a recipe for butternut squash burgers, but they sound lovely.
I reckon (off the top of my head) that I would make it with some lightly cooked butternut squash, finely chopped onions, some herbs, breadcrumbs and a little egg mix to bind the lot together.
Case of trial and error?0 -

Yes, I can imagine that buckwheat would absorb moisture and I agree that BNS can be soggy.
Suppose you could also use some cooked rice (yes, I know the dangers of reheating rice, so be careful how you handle it - remember the cold chain), polenta or couscous as a binding/absorbing ingredient in your burgers too?
Waitrose make a smoked cheese and BNS Burger: Two succulent burgers made from aduki beans and smoked Cheddar cheese with smooth, roasted butternut squash, spinach and pumpkin seeds, seasoned with black pepper and sage.
