Soup and dumplings!

I've got lots of stock left over from cooking a ham yesterday and the flavours used in it (fennel, star anise, garlic, cinnamon etc) are making me think some sort of oriental soup might be good. I'm not quite sure where to start with it though 
I would also like to try make some of those little dumpling things too but I don't have any wonton wrappers (or can get hold of any easily) so I'm wondering if i can compromise and make them with something else?
Oh, and whilst on the subject of soups, I've also got some lovely goose stock that needs using too. Any ideas for this too please? :A

Here is a recipe to make the wrappers if you wanted to, a friend of mine did it, and said it was easy enough, just hard to roll them really thin.
With the goose stock-I made broth-absolutely glorious I have to say-just carrot, onion, leek and celery sweated off, added the stock and plenty of pearl barley, cook until cookedseason to taste
(I prefer mine without any extra meat, but if you have any leftover can add that too.
Or french onion soup-I found my goose stock so richly flavoured I would want a soup that it is the star of IYKWIM? Hence the broth.yum yum0 -
