I am making profiteroles for christmas lunch and need to know how far in advance i can make them. I have spare time this afternoon and thought that if they would last it would be a good time to make them.
Does anyone know how well the pastry shells would keep. Not intending of putting the cream in until christmas day

I'm afraid choux pastry does not keep at all well -a couple of hours at best. However you can buy frozen profiteroles so I assume you can freeze the empty shells. I think they'd be a bit soggy on defrosting though -maybe they could be revived by a brief spell in the oven to crisp up a bit.0

well they freeze perfectly, or put them in a sealed tub witha piece of kitchen paper in bottom, if they were pricked so are relatively dry they will last 5 days out of a fridge!!!£5000 debt cleared thanks to MSE advice :money:0

Buy them from either Farm Foods or Asda....£1 for a box of 20:T :TWhen life throws you lemons...put them in a gin and tonic !!0

Cook them whenever you like. Cut a slit in them to dry out and put in a tin or plastic box. Only put the cream in them before you serve them as they go soggy -then pour over the chocolate sauce yumyum .If you have any of the shells left over serve them with cream cheese intead of cream and chocolate.0
